Hot Honey Beef Bowls

First, prepare the pickled onions- these can be prepared 1-2 days in advance. Thinly slice the red onion and add it to a jar. Top it with the hot water, vinegar, sugar and salt and shake well. Let it marinate for at least 20-30 minutes before serving. Keep refrigerated for up to 1 week
Preheat the oven to 400 F
Add the sliced sweet potatoes to a large sheet pan. Drizzle with olive oil and season with salt. Place the sweet potato halves face down onto the pan.
Bake for 45 minutes. Remove them from the oven and flip them over. Drizzle with hot honey and bake for another 10 minutes.
In the meantime, prepare the ground beef. Heat a skillet with about 3 tbsp of olive oil. Add the beef and break it apart into small pieces.
Add the spices and cook on medium heat for about 15 minutes, until the meat is browned. If the spices start to stick to the pan, add about 2-3 tbsp of water to help loosen it up. Mix every few minutes. Towards the end, drizzle about 1 tbsp of hot honey and mix it into the beef.
Serve the sweet potatoes and beef with avocado, pickled red onions and arugula salad. Top with a light drizzle of olive oil and hot honey
